Tomato Cheese Casserole

4 medium tomatoes cut in 1/2” slices

1 cup grated cheddar (or pepperjack) cheese

1/3 cup thinly sliced onions

1/2 tsp. salt

1/8 tsp. pepper

1 cup crushed potato chips  


Preheat oven to 350⁰F. Layer tomatoes, cheese, onions, salt and pepper (2 layers). Top with crushed chips in 1 1/2 quart casserole dish. Bake 30 minutes or until cheese is bubbly.
