Savory Pumpkin Soup

4 cups vegetable or chicken stock

1 ½ teaspoon salt

Pepper to taste

4 cups pumpkin puree

1 cup chopped onion

½ teaspoon chopped fresh thyme

1 clove garlic, minced

½ cup heavy whipping cream  


Bring to a boil the stock, salt, pumpkin, onion, thyme, garlic and pepper. Reduce heat to low, and simmer for 30 minutes uncovered. Puree the soup in small batches or use blender stick in the pot. Return to pan, (if blending in blender) and bring to a boil again. Reduce heat to low, and simmer for another 30 minutes, uncovered. Stir in heavy cream and serve. Serve this with toasted bread, crouton toppings, or jasmine rice for a denser meal.
